To the Prokritoi's taste

What did the new Greek leading class of prokritoi* eat in the Ottoman occupied Greece? 
For Evmaros art gallery I recreated a menu from banquets that were actually described in foreign visitors' memoirs. These documents give us clues about the ingredients and cooking methods.
The participants enjoyed pilafs, meat dishes, pies, sherbets, cakes, an amalgam of local cuisine, Ottoman cuisine and western recipes.  (Evmaros Gallery, Athens).

The prokritoi were essentially bureaucrats and tax collectors, and gained a negative reputation for corruption and nepotism..
