For Evmaros art gallery I recreated a menu from banquets that were actually described in foreign visitors' memoirs. These documents give us clues about the ingredients and cooking methods.
The participants enjoyed pilafs, meat dishes, pies, sherbets, cakes, an amalgam of local cuisine, Ottoman cuisine and western recipes. (Evmaros Gallery, Athens).
